Delicious Cinnamon cupcakes

Cinnamon cupcakes

Made using our own yummy Cinnamon Marmalade

Mini marmalades


100g Stork Margarine
100g castor Sugar
3 eggs
125g Self Raising Flour
40g cinnamon Marmalade

Oven Temp 189*

Makes 12 cupcakes or one 1lb loaf tin

Cream margarine & sugar using an electric mixer
Once light & fluffy beat in one spoonful of flour
Beat eggs and gradually beat in to the sugar mixture
If the mixture starts to curdle, add a little more flour
Beat in the Marmalade, then turn the mixer down to its lowest speed
Carefully Beat in all the flour until just combined

Divide mixture between cupcake cases or pour into a greased & lined loaf tin

Bake in oven until well risen & firm to the touch
Approx 20 mins for cupcakes or 30 mins for loaf

Once cool, decorate with buttercream or orange flavoured royal icing
